I use green/red peppers for main ingredient but you can use other things, zucchini works really well. I have no specific recipes, quantities are approximate.

6 Peppers, green, red or both.
1 large onion
2 stalks of celery
4 carrots

I use food processor to chop all the ingredients up, don't make it mush. In large pot add the chopped vegetables and:

1 cup of vinegar, I use apple cider
1 cup of sugar
Salt and pepper to taste. I don't add much salt, half tsp. at most.
Pinch of hot crushed red pepper, I add just enough so you know it's there.

Bring mixture to boil and then low simmer. If you give it taste there will be raw onion taste. Simmer for about 1 hour uncovered. Raw onion taste should be completely gone and it's done. If you want it crunchy boil and simmer the onions first. Then add the rest of the vegetables for short time at end.

Note: that 1:1 ration for sugar and vinegar seems to work well for anything you are trying to make sweet and sour.
