Freezing and thawing damage is much more the issue of chimneys running up the exterior of building.
Exterior type is exposed to freezing temps that any interior chimney would never ever see...

Bill, you are making"much to do about nothing". If your chimney is sound, just add one flue, a new cap & call it a day.

I just had mine done. It was up for 26 years then Super Storm Sandy hit and knocked the top half down. Luckily it fell between the house and my fence and not on the roof. I had professional chimney and fireplace builders do it from ground level up. I watched them every day and it was a lot of hard work. I had them add rebar vertically from the middle to the top and put braces on the outside down to the roof to help support it. It wasn’t cheap and the kicker was they said the town required a permit but when they came to inspect it (fire &building) they said since it was a repair I didn’t need one. That wasn’t cheap either. So far so good and it’s an 8 in square flue.
