A 10° differential is good. LL at 180° and HL at 200° is fine. On a Honeywell aquastat, always keep at least 20° between the LL and HL to prevent circulator lockout. On Hydrolevels you can set them 10° apart, but I'd just stick with 20° apart for safety.
You could lower your LL to save a little coal during normal weather and raise up to 180° during those polar vortex events.
