Would it work? Looking for a way to remote monitor. Boiler is currently setup with older style timer for grate. Looking to upgrade to a temperature based setup like the newer models.

Yes but can you see them remotely other then if you have a camera on them? I know the inkbird is popular in wood boilers.

ITC-308 looks like a hand held unit. It has AC outlets and plugs and plastic sheathing over the temperature probe cable. None of these features are a good idea for a boiler or ashing control. you need hard wired controls for safety.
Also, in my opinion it's not a good idea to control critical boiler functions via WiFi.
I use the ITC-106-VH units and the have worked very well for close to 2 years now.

It plugs into the wall. I was planning on still passing through the safety's in series. You can adjust setpoint remotely and track temperature with alarms. I already use one on my fish tank. Just wasn't sure if anyone on here had.

Yeah.. I don't really feel the need to be able to adjust anything remotely. I just like to be able to see what's going on. Although, it might be handy to remotely cut power to the boiler with a phone app if I see something is going off the rails.

That would be fine if you were just going to monitor ash temperature. Pugging it into the wall isn't going to work if you are controlling the ashing. It has to be hard wired into the system.
Even if you cut the plugs and sockets off, then hard wire it, you still haven't solved the problem of the plastic probe sheathing melting off.
