It's a safety device. An aquastat can fail "on" and that would be a disaster.
That's probably the scariest thing I've read in a while...why do some boilers have a dump zone and others just have a high limit cutoff? And some have both, right?

My keystoker wants the L4006B and my AA wants the L4006A. I understand the norm. open / norm. closed difference and how the wiring all works. Am I correct in saying these are just two separate ways of preventing a disaster? (one kills, the other dumps)

You are correct.

The “dump” is optional but the high/high limit is a often overlooked required safety.

I don’t run a dump zone but still make good use of that N/O contact by toggling on a neon or LED indicator light which shows exactly that the H/HL has been activated. This saves wondering what stopped or killed the boiler…and it will automatically reset after boiler temperature cools sufficiently.

A dump zone is most useful for scrubbing off a little extra heat in the event the boiler overshoots the setpoint a bit, or gets hot from running on the timer cycles. A dump zone will not be helpful in a runaway boiler situation unless the zone can absorb the full output of the boiler.
