2 week update - even with the power turned off to the electric water heater, we have had all of the hot water we can use, and the temperature seems to be very stable. So far this seems to be working very well.

I have never ran out of hot water with my setup, if with days without use, I believe mine gravity flows though through the mixing valve somehow, cuz when there is no use of domestic water, my well cold feed into the late exchanger is piping hot. I maybe got lucky with how I plumbed mine.

It sounds like you do have some gravity flow through the system. Good deal - keeps the elements from turning on if you don't use much water for a day or two.
One issue (not really a problem) I have noticed since I started using my plate HX, is that my basement is warmer. Previously all of the piping would go cold when nothing was calling for heat. Now everything is staying at the same temperature as the boiler due to the constant circulation through the plate HX. The 1" copper and zone manifolds act like a radiator, and my basement gets up to 75 degrees or so on the warm days. I shut my EFM down a few days ago to give it a really good cleaning prior to cold weather, so I decided to get some pipe insulation and see if that makes an improvement. I don't mind a warm basement, but I don't want it 80 down there.

Yup the corner of my downstairs is deff a little warmer, and I have everything insulated, but no big deal, my tstat still runs down there cuz the boiler isn’t down there, my last house with the boiler and furnace downstairs it was always crazy hot, 80-85.. I love this boiler being remote.

I think once I get the piping insulated it will be perfect. I have a radiator down there that will kick on if needed.
