I was like hm, I'll try holding the button down and see if it changes, after a few seconds it jumped a few degrees, so I just started pressing the button and it changed a degree. So simple but so complicated at the same time. :P

I have said before that the V3 firmware features are in there. They may be somewhat clumsy to access but the values are there.

Good work on finding your correct values, the Coal-trol can behave pretty much as you wish with careful adjustments.

I have it set pretty close to the way I want it now. The temp reads the same as my other thermostat now.

In the morning when it's coldest it's still very close to the set point, so I'm pretty happy overall.

The temperature adjustment allows for sub-degree adjustment, which is why you need 5-7 presses per degree of change. There wasn't enough screen space to show the decimal, though. And even if there was it would tend to jump a little unexpectedly due to the precision of the raw reading only allowing for 5-7 steps per degree, which would lead to other confusions. :)
