Can a windy day change how your chimney drafts and how would you overcome that?

Yes, Install a barometric damper.

I’ve got that installed and set to about a .03-.035. Could that be too high? I have an Alaska Kast Console hearth model. I bought it used and I don’t have a manual. I have a CO monitor hanging in the hopper and it’s not going off.

You should be able to get a manual from the maker if it isnt online somewhere, or call them for info.
