So I Restore a Wide Variety of Wood and Coal Stoves, but came across this Old Mill Stoker with Controls I have never seen. Anyone familiar with them and how they work?

Welcome to the forum,
The box with 2 knobs is the timer. The timer runs the stoker every few minutes to keep the fire lit between heat calls. With a stoker like the Old Mill, probably a minute or two every ten minutes. The timer you have there is a very good one.
The other box looks like some kind of thermostatic control.

So if I set it for 25% on the one dial and 60 minutes on the other dial, does that mean it runs 15 minutes every hour when the Thermostat isn't calling for Heat?

Thank You! Yes the other Box is the Thermostat...I fired it up, and it cranked Good Heat..That one will be for sale, I like the Coal Trol on my Hitzer. I saw someone had used a Coaltrol on the same Old Mill in a Past Forum..
