So I Restore a Wide Variety of Wood and Coal Stoves, but came across this Old Mill Stoker with Controls I have never seen. Anyone familiar with them and how they work?

- Hand Fed Coal Furnace: Harman SF3500 reduced down to 3 grates connected to its own plenum

Welcome to the forum,
The box with 2 knobs is the timer. The timer runs the stoker every few minutes to keep the fire lit between heat calls. With a stoker like the Old Mill, probably a minute or two every ten minutes. The timer you have there is a very good one.
The other box looks like some kind of thermostatic control.

So if I set it for 25% on the one dial and 60 minutes on the other dial, does that mean it runs 15 minutes every hour when the Thermostat isn't calling for Heat?
