That makes sense ( I’m running 4 probes so 2 weeks to drain ) I had a really early single probe that I bought on clearance for 30- or so back in 2010 ( but 408* was the max temp so I positioned the probe halfway down the side than add 100* ) if you wanted to read 600* degrees remotely 10 years ago it would’ve cost close to 1000- just a single thermocouple was 100- or so , than you need low voltage and basically program your own unit . And buying anything back then you would need to wait 2-3 weeks for delivery
