I have revised my plan. I am going to build a carriage house. Downstairs 500sq ft and 500sq ft upstairs

Excellent, I like carriage houses.
Where on the floor plan are you thinking of having the chimney?
I don't recall seeing one with a chimney, but have imagined on either gable end would be where one would be constructed.

For 500 sq ft most stoves might be kinda large. My house is 1150 sq it heats it to 80 quite nicely. If I were to block off the back half it would be about 500 square. With that I’m sure I could keep it low enough and lite to heat the intended area quite efficiently. Yes. I heat to 80 In My main room. After working all day and being cold you have to be able to get the chill off. Yes. I hate the cold
What about a Jotul 507? I've always thought they were the neatest little stoves ever since I first saw a Jotul brochure back in the late 70's. No experience with one and I may have seen one in person but it's been so long I can't recall.

I have no experience with the jotul stoves. I’ve seen pics. They look pretty but I want easy. The 30/95 is probably from what I’ve read one of the easiest stoves to operate. (Based on how long it takes to tend, the ease of tending, general cleanliness and the least amount of puff back backs - un-official info gathered from others here
