Well,Lasses and Laddies! We've made it! Seems that Magically Everyone gets 24 Whole Hours to be Irish! I know I'll be partaking a Touch as I cook the Traditional Corned Beef,Cabbage,Carrots and Potatoes Meal! Also served with warm Rye Bread and Butter! I'll be sure to have my Good Friends,John Wayne and Maureen O'Hara over to watch their Classic Movie "The Quiet Man"!!

Good morning. We usually host a St. Patty's day dinner the day before...this gets a better turn out, and allows everyone enough time to recover before Monday. Last night was no exception, two corned beef briskets with our own spice mix, cooked in a dutch oven. Cabbage, carrots, and potatoes all cooked in stages so nothing gets messy. Irish soda bread, and of course...green beer.

While not the traditional Irish boiling bacon, I'll be making more of this baked corned beef. Melissa did a trail run a couple of weeks ago (picture below) and it turned out fantastic.

And to feed my Scottish side, neeps alongside the potatos. ;)

My Mother sailed into New York harbor on a ship from Cork Ireland 63 years ago today. I was born 4 years later.

I have Corned Beef and Cabbage simmering now, it should be ready for supper. No Irish ancestry but I do like corned beef, I'll stick with amber color for my beer.

Yes, baked fat side up - on a rack in a roasting pan, with lid on, at about 300F for 2-3 hours depending on size. It retains lots more corned beef flavor than when it's boiled, like I grew up with. And it's not as greasy because it's cooked up on a rack, not floating in greasy hot water.

The crust you see is a rub Melissa made using, 2/3 cup brown sugar, 1-1/2 tbsp. dried mustard, 2 tbsp. dried ginger, 2 tsp. garlic powder, 2 tsp. onion powder, the enclosed packet of pickling spices plus 2 additional tbsp. of pickling spice, 1/2 tsp. black pepper.

Rinse the corned beef and pat it very dry before putting the rub on.

If you want it less salty, soak the thawed corned beef in water overnight in the refrigerator.

Enjoy.

Ah the Irish... about the only nationality that was smart enough to have a holiday that drinking is almost mandatory. We really should drop Columbus Day and replace it with St Patricks Day. :yes: Im a mongrel of nationalities including Irish.

Actually St Patrick's Day celebrations and parades is an American thing. In Ireland it's just treated like any other Saint holy day by going to Church.

And corned beef is Jewish, not Irish. When poor Irish immigrants came to Boston and NYC, there was no equivalent to Irish "boiling bacon". So they went to the Jewish butchers near the ghettos they lived in and got corned beef.
