Has anone any experience with applying a wood finish themselves to stairs and bannisters? (like this https://www.ams.ie/products_and_services_decoral_ ... finish.cfm )
Any tips or suppliers recommendations would be great. Drying time is also of interest (kids have a knack for walking through cement, taking wet paint off the wall etc.)

You gotta come up with more then that J. PIX are mandatory!!!! You're doin aluminum??? Your kids don't know what--"stay the hell off the stairs" means??? Where ya from? Ya could finish your profile--really, nobody's gonna steal ya. What ever the suggested drying time is--double it!!!!!!!!!!!!!!!!! The pictured lil ditty is a grain maker--interesting lil item I use when refinishing metal/wood outdoor furniture when wanting a nice wood grain look. Ya might check it out. Just GOOGLE "wood graining tool"

I would say your best option would be the kit that Fred suggested .
The link to the Decoral system that you provided is a little bit of an overkill unless you intend to wood grain a few thousand aluminum extrusions. The equipment cost alone for a basic Decoral system is over $370,000.

Here is a good link from Zar products. This is the technique I used on my front entry door.
