Actually, Real Swiss has never been known for it's sharp flavor but I prefer the Baby Swiss. Aging is the trick to sharpness.

I did an add on above, but aging is the trick to sharpness & apparently people don't see to age Swiss for whatever reason.

I believe you are from Ohio. Try either of 'Pearl Valley' Aged or Emmentaler.

But, if you want a bit of sharper flavor, you can shred some sharp cheddar over the Swiss before heating it and it will melt right in. Just don't tell the purists.

Not sure how your using "akin" but yes, the longer a cheese ages, the sharper it will get.
