Actually, Real Swiss has never been known for it's sharp flavor but I prefer the Baby Swiss. Aging is the trick to sharpness.

I did an add on above, but aging is the trick to sharpness & apparently people don't see to age Swiss for whatever reason.

I believe you are from Ohio. Try either of 'Pearl Valley' Aged or Emmentaler.

Fred, are you saying Swiss gets sharper with age akin to Cheddar? That's news to me as well.
