Actually, Real Swiss has never been known for it's sharp flavor but I prefer the Baby Swiss. Aging is the trick to sharpness.

I did an add on above, but aging is the trick to sharpness & apparently people don't see to age Swiss for whatever reason.

I believe you are from Ohio. Try either of 'Pearl Valley' Aged or Emmentaler.

But, if you want a bit of sharper flavor, you can shred some sharp cheddar over the Swiss before heating it and it will melt right in. Just don't tell the purists. ;)

Fred, are you saying Swiss gets sharper with age akin to Cheddar? That's news to me as well.

Not sure how your using "akin" but yes, the longer a cheese ages, the sharper it will get.
