Ive never eaten woodchuck and never will, but I know 2 people that have told me its the best tasting meat there is. I'd eat skunk first, but maybe those Russkis know their food!

I've eaten quite a few of Phil's relatives over the years. The claim is that it tastes like chicken.....that isn't true. It's actually good, in my opinion. The meat has a stronger taste (some call it 'gamey'). The best ones are young, as they are more tender, but now that I found out about slow cooking old hens I would like to try one again. They key to cooking an old hen, is not to let the water boil. No more than 150 degrees for about 12 hours or so. It worked with my 2 year old hens.

I had muskrat stew and it was just fine....funny we get notions of what is bad? to eat.......The stuff being harvested off Maine for the Asian and others diet would turn your stomach. Sea cucumbers and Urchin roe is nasty to look at.

I belong to a group affectionately known as the Thursday Night Oyster Boys. We meet every Thursday from 5 till about 9 in a guys barn. We get a bunch of fresh oysters and plenty of cold beer. Everyone brings something else to contribute, usually wild game. This week for instance we are having fresh venison, just shot yesterday. But throughout the winter we've had rabbit, squirrel, racoon and yes, ground hog. Ground hog is actually very good.

I have friends that eat Woodchuck. Anytime someone says yuck, they point out that Chucks are grass fed just like beef are. They tell me that when slow cooked properly, Chucks make a pot roast you couldn't tell from beef.
I have instructions, with pictures for how to properly clean and prepare them, but I've never tried it. Since Chucks are so obliging as to dig their own graves, I find it less work to bring a shovel and just bury the ones digging up my farmer friend's fields.
