I've never eaten brains myself, and probably never will. Nor will I eat at the New China House.

My Grandparents loved hogs head cheese on crackers with buttermilk..

I like souse (head cheese). I like mine a little sweeter, I add sugar to the vinegar. It's the best way to use all the meat from a hog.

It's not made from brains though (at least I've never seen it made with the brains)

Just looked up head cheese on wiki.. what my Grandparents called hogs head cheese didnt look nothing like the pics on wiki.. so they may of not used the correct term.

It actually looked more like pig brains and eggs scrambled. been many many years since then so who know but them for sure : )

What I made didn't look like any of those pictures either. I boiled the bones after butchering and got all the scraps of meat that were left on the bones to make mine.

I've never eaten brains, and I might try them if given the opportunity but around here at least, deer brains would not be the best choice due to "chronic wasting disease".
