Deep Fried Turkey - Cajun Injectable Marinade

I fried a 12# turkey in peanut oil yesterday - I found a few recipes online for injectable marinades and then created one of my own. This was too good not to share:

• 1 cup lemon juice
• 1/2 cup olive oil
• 1 stick butter
• 2 tablespoons onion powder
• 2 tablespoons garlic powder
• 2 tablespoons Cajun or Creole seasoning
• 1 tablespoon Franks Original Red Hot Sauce
• 1 teaspoon cayenne pepper

Combine all ingredients in a saucepan. Heat until butter is melted. Stir and continue heating until sauce is liquefied. Inject while still hot enough to stay liquid.

MMMMMMMMM sounds good! 12# is the majic number to fit the standard deepfryer!! I do 3 at a time on 3 burners. I bet the "Swamp Fire" similar to Old Bay.. will go in that recipe too!!

I have been deep frying turkeys since 1995.
They always taste good!!!
I have used cajun injector creole butter with very tasty results and I have a recipe that I found years ago that is very good also. It sounds a lot like tully's recipe.

There is a 'road kill wild turkey' in Buckfield, ME. Took a 24 year old guy off his motorcycle, knocked him out, but the turkey did not leave the scene. His helmet prevented him from becoming an 'organ donor', but the 26 lb turkey is up for bid! I'll bet freddie drove over there already and has it cookin' on the Jameson tonite!

PS: Has anyone else heard about the ongoing problem with cholesterol besides me?
I know, it's peanut oil......not Castrol high mileage.

I just ordered a burner for brewing and thought I would fry a turkey soon. I wanted to try frying one now so I know how it will turn out for Thanksgiving. I have not tried one. They sound good though!

The oil in the fryer is only good for 3 weeks(2 is better, trust me).

If you strain it before putting it back into original jug & keep it in a cool & dark place, it will keep for 7-8 months.......

Charbroils oiless turkey fryer is another choice.
